The Role
Join us as Head of Casual Dining and shape the future of dining at one of Australia's most iconic hospitality destinations.
Reporting to the Executive General Manager - Food & Beverage, you will lead the performance, growth and strategic direction of Crown Melbourne's casual dining portfolio.
This pivotal leadership role is responsible for delivering exceptional guest experiences, operational excellence and strong commercial outcomes across a diverse collection of venues. You will drive business performance, strengthen guest engagement and identify opportunities to enhance Crown's position within Melbourne's dynamic hospitality market.
In this role, you will:
• Lead the strategic direction, performance and operational excellence of Crown Melbourne's casual dining portfolio.
• Oversee portfolio financial performance including revenue growth, labour management, cost control, EBITDA and business planning outcomes.
• Develop and execute portfolio strategies that support venue growth, evolution and market positioning.
• Lead, coach and develop a high-performing team of Restaurant General Managers and venue leaders.
• Champion exceptional guest experiences through consistent service, quality and presentation standards.
• Partner with Culinary and Marketing teams to deliver menu innovation and guest engagement initiatives.
• Utilise guest insights, commercial data and market trends to identify opportunities for continuous improvement and portfolio growth.
• Lead budgeting, forecasting and business planning processes in partnership with Finance stakeholders.
• Present performance outcomes and strategic initiatives to executive stakeholders.
• Foster a culture of accountability, inclusion and operational excellence that reflects Crown's values and service standards.
About You
You are an accomplished hospitality leader with extensive experience managing large-scale restaurant operations, multi-site venue portfolios or integrated hospitality environments.
Commercially minded and operationally focused, you have a proven ability to lead high-performing teams, drive business performance and deliver exceptional guest experiences across diverse hospitality operations.
You will also bring:
• Significant leadership experience within casual dining, full-service restaurant groups or large hospitality operations.
• Proven success managing complex multi-site restaurant portfolios and delivering strong commercial outcomes.
• Demonstrated experience leading large-scale P&L portfolios, budgeting processes and operational performance initiatives.
• Strong financial acumen with the ability to analyse performance, identify opportunities and drive profitability.
• Exceptional leadership capability with a history of developing, motivating and retaining high-performing teams.
• Strong stakeholder management and influencing skills, with the ability to balance strategic priorities and operational execution.
• Experience leading growth initiatives, including venue openings, business expansion and organisational change.
• Strong knowledge of compliance, food safety, workplace safety and responsible service requirements.
• Relevant tertiary qualifications in Hospitality Management, Business or a related discipline will be highly regarded.
